Billecart Salmon own large tracts of very high quality chardonnay vineyard in the Côte des Blancs, giving them a wonderful basis from which to make this standard-bearing 100% chardonnay wine. It has three years of lees ageing, giving it plenty of opportunity to develop complex characters. The classic style of blanc de blancs is light and intensely pure, with more honeyed, floral aromas and flavours than the richer, stronger pinot-based wines. The ultimate in aperatif styles, blanc de blancs is best without food, although the very best have the depth of flavour to cope with light fish dishes, for example.
